Healthy Snacks and Easy Plant Based Recipes

Looking for healthy snacks and easy plant based recipes? This collection of easy recipe ideas makes it easy follow a mindful diet with convenient snacks and simple meals.While we don't prescribe to a particular diet, all of these plant based recipes adhere to principles of the Mediterranean diet and anti inflammatory diet and are vegan and gluten free. You will see lentils are a common ingredient, because lentils are high in protein, fiber, phytonutrients, and other important micronutrients like iron and potassium, and we love lentils! 

Healthy Artichoke Dip

This dip is an excellent healthy artichoke dip with extra protein, less fat and great if you are looking for easy Mediterranean diet snacks. 

1/4 C. Hummus

1/8 C. Artichoke hearts, drained and coursely chopped

1-2 T. Chopped olives, drained 

1/3 C. Cheddar cheese (if plant based, choose one that melts well)

2 T. Pro-Chi Lentil Crunch, Simply Salted

Combine hummus, half of cheese, artichokes and olives in a small oven safe dish. Top with remaining cheese and sprinkle with Pro-Chi Lentil Crunch.  Bake at 350 degrees for about 12 minutes then transfer oven to broil and let cook for an additional few minutes just until top is slightly browned and bubbling.  

Serves 2.


Protein Parfait

¼ t. Cinnamon

1/8 C. Apples, very thinly sliced into matchsticks

½ C. Vanilla yogurt (dairy or plant-based, as you prefer)

¼ C. Pro-Chi Protein Crunch, Almond Butter Raisin

Sprinkle cinnamon in the bottom of a small container, add sliced apples, top with vanilla yogurt, and then add Pro-Chi Protein Crunch on top.  

You get the protein from the yogurt and Protein Crunch and your apple for the day.  This combination is really good and highly recommended as an easy breakfast idea or healthy snack.  

Serves 1.
