This cabbage salad is delicious and perfect because it uses long-lasting fridge and pantry staples. Pro-Chi is a great way to add protein-without any fuss and the lentils are a great source of plant-based nutrition for vegetarian, flexitarian, and vegan diets.
Half head of cabbage, thinly sliced
1/4 C. yogurt
2 T. balsamic vinaigrette
1/8 C. red onion, sliced
1/3 C. jarred artichoke hearts in oil, drained and quartered
2 T. kalamata olives
Combine sliced cabbage with yogurt and balsamic dressing and toss well. Then top with red onion, artichoke hearts, olives, and Pro-Chi. Season with salt and pepper to taste and enjoy!
